Pomegranate Coulis

Ingredients

Pomegranate seeds 1 cup (1 large fruit) – see link: ‘Two Minute-Deseeding a Pomegranate’
Water 1 cup
Caster/superfine sugar 4 Tbsp (or replace both the water above and sugar with 1 cup of 'Grenadine Syrop' (photo below)
Corn flour/corn starch 2 tsp
Lemon juice 2 tsp
Rum/vodka1 2 tsp – optional (if preferred, use 1 tsp of vanilla extract instead)

 

Method

1. Place pomegranate seeds and water in a blender for 1 minute to allow the juice to come out of the seeds. Use a fine sieve to strain the seeds out.

2. Mix the pomegranate juice with the rest of the ingredients in a small saucepan. Bring to the boil over medium high heat whilst stirring constantly. Reduce to simmer for a few more minutes or until the mixture thickens. Remove from heat.

3. When cool, if not using it straight away, transfer the coulis2 to a small glass jar/bottle. This can be stored in the fridge for several days.

 

Tips

1Adding rum or vodka to the coulis will help prolong its shelf-life

2 If short of time, just mix equal parts of 'Pomegranate Molasses' and 'Grenadine' (photos below). Both are available at supermarkets and off-licence shops.
